Simple Grilled BBQ Chicken Pizza
Pizza is the greatest food of all time. So why not take your pizza to one of the greatest places on the planet (aka the grill) and REALLY treat yourself? This is another simple recipe that utilizes a lot of ready ingredients. You can use homemade dough instead if you'd like, but the pre-made naan makes this thing a piece of cake. (Well it's technically a piece of pizza--but you get it.)

Homemade BBQ Chicken Pizza
Instructions
  1. Preheat grill to medium heat. If using pre-cooked chicken, skip to step three.
  2. If using raw chicken, preheat pan over medium heat on a stovetop. Slice the chicken breast into thin, bite-sized pieces. Heat olive oil in pan until shimmering. Add chicken pieces and stir occasionally until cooked about 90% through. This ensures the chicken won't be overcooked and rubbery when heating over the grill.
  3. Slice red onion into thin strips. If using block cheese, grate the mozzarella. Roughly chop cilantro.
  4. Prepare your pizzas by taking the naan, spreading 2 tablespoons of barbecue sauce over the top of each, then covering with with grated mozzarella, cooked chicken pieces, and red onion.
  5. Grill your pizzas approximately 10-15 minutes until the naan is firm and cheese has thoroughly melted.
  6. Top your pizzas with freshly chopped cilantro and serve immediately. (We also recommended topping with some freshly shaved Parmigiano-Reggiano cheese.)

We love easy recipes here. This is another great recipe when you get home from a long day and don't feel like tearing apart your kitchen. Just kick up the grill, prep the naan bread, then (preferably) relax in front of a pool. (If you don't have a pool, feel free to substitute with eating your dinner in the bathtub.)
