Instructions
- Bring pot of water to boil over medium heat. Cook pasta al dente according to directions. While pasta cooks, move on to the next step. After pasta has boiled, remove from water and place aside. (To prevent pasta from sticking, feel free to toss in 1-2 tablespoons olive oil.)
- In a medium bowl, whisk together honey, lemons, apple cider vinegar, 2 tablespoons olive oil, 1 tablespoon lemon pepper, salt & pepper, and leaves of thyme.
- In a large skillet heat olive oil over medium-high heat, cook diced chicken, stirring frequently to cook all sides and avoid browning.Season with salt, pepper, & lemon pepper. Cook for about 5 minutes or until chicken is mostly cooked (about 90%).
- Reduce heat to medium-low, pour sauce over chicken, and cook for another 5 minutes or until sauce has thickened and chicken is cooked thoroughly.
- Add cooked spaghetti and half of the parmesan to the pan--stirring until coated evenly. Top pasta with additional parmesan. Serve immediately!
