Chicken Tikka Masala

Instructions
  1. In a medium sauce pan, bring 4 cups of water to a rolling boil. Add basmati rice, reduce heat to low, cover with lid for 15-20 minutes or until water is absorbed. Fluff with fork. While rice cooks, proceed with the following steps.
  2. Cut chicken breast into roughly 1 inch-sized chunks. Over medium-high heat, warm 1 tablespoon of olive oil in a large skillet. Add chicken, cook and brown meat for about 5-7 minutes or until chicken is no longer pink. Remove from skillet and set aside.
  3. in a small bowl, make your seasoning mix combining: turmeric, garam masala, coriander, cumin, garlic powder, red pepper flakes. Alternatively, see notes below.
  4. Place skillet back over heat, adding oil & butter. Add onion, stir and sweat for approximately 3 minutes until clear. Add chicken back into skillet with seasoning mix and 15 ounce can of tomato sauce. cook for 8 to 10 minutes until the chicken is cooked through completely. Stir occasionally to avoid burning. (You may need to reduce the heat of your pan to prevent bubbling of tomato sauce.)
  5. Add greek yogurt. Reduce heat to low; simmering for approximately 10 minutes until the tikka masala thickens. Stir occasionally. Serve over rice. Garnish with chopped cilantro. Additionally, serve with naan bread on the side.

Look, here's the thing: spices can be pricey. I totally get it. For some tiny jars of garam masala, turmeric, and coriander, you could easily be spending $12-20 alone. ("Well then why don't I just go to a restaurant and order this instead, Jeremy?" Yeah, I bet you're real fun at parties.)
