Kale & Quinoa Strawberry Salad

Kale & Quinoa Strawberry Salad

I'll be the first to admit--I'm typically not the biggest fan of kale. I'll eat it, but generally when used in other dishes, I find it to be overly bitter. Thanks to a class I was taking, that's when I found a great way to make kale much more enjoyable: marinating in sherry vinegar.
Classic Chicken Fried Rice

Classic Chicken Fried Rice

This is a great recipe when you’re tired and want something quick--especially if you’ve got the leftover rice to boot. In my family, I grew up eating jasmine rice with literally every meal. (Like they say... rice is the perfect food when you’re hungry and want to eat 2,000 of something. RIP Mitch Hedberg.) Jasmine is the preferred type of rice to use for this dish unless you’re on a health kick, in which case you can sub it out for brown rice or even quinoa.

Mediterranean Chicken Pesto Pasta Salad with Candied Pecans

Mediterranean Chicken Pesto Pasta Salad with Candied Pecans

Here’s a great recipe I came up with the other day. Now I’m typically not a massive pesto lover, but I’ve really been craving pasta salad lately and thought this could be a great idea. Turns out I was on to something.. The pesto serves as a great base to compliment the canvas of pasta and nuttiness of the cheese. On top of everything else, the candied pecans will give your pasta an awesome extra crunch and flavor.
